We’re using Hurst Hambeen’s 15-bean soup recipe because, frankly, it’s so good I can’t even improve it. This classic recipe has been an option for many, many years!

Ingredients

Ingredients for 15 bean soups, including Hurst Hambeens, Hambone, broth and more
  • HamBeens 15 Bean Soup- ® Hurst was the first to pack dried beans with a flavor pack many years ago, and became famous for its variety of 15 bean® soups Dry. This is still the leading brand today, and the only one I use for my 15-bean soup! You can find it in a store near you here.
  • Water or Broth

  • – I prefer to use chicken, beef or vegetable broth to add flavor and used chicken broth as prepared in the photos here
  • .

  • Meat– You can use your choice of smoked sausage, ground sausage (pan-browned), ham hocks or diced ham. This is our visit when we have a hambone left over from the holidays! It gives a lot of delicious flavor to the soup. In the photos here, I didn’t have a hambone, so I only used diced ham for a quick way to cook this soup!
  • Onion– I usually use a large yellow onion, but white or sweet will also work well
  • Garlic– Using fresh gives the most flavor
  • to chili powder, this is optional, but I highly recommend it. It adds to the depth of flavor and doesn’t make it spicy at all
  • Diced tomatoes: Usingcanned tomatoes makes it quick and easy
  • Lemon juice: this is to finish the soup at the end. You will get the most delicious results using a fresh lemon for juice
  • Optional: Hot sauce or crushed red pepper to taste: you can add a little kick or a big one! I add a little bit to everything to give it flavor (not spices), then let each person add more to taste.

Recipe tips

  1. No need to soak! The beauty of using the clay pot for this recipe is that it saves time and steps. You want to rinse the beans and sort out the ones that aren’t good, but that’s usually minimal. There is no need to do any additional soaking.
  2. Do not open the lid. It’s very tempting to open it, stir the soup, and get that heavenly smell of the aroma of soup cooking, but RESIST! Every time you open the lid, it will slow down the cooking process. Leaving the lid on will produce tenderer beans, more quickly.
  3. Add the tomatoes and lemon

  4. at the end – it is noted in the instructions for adding the tomatoes and lemon juice after cooking, but it is worth noting that there is an important reason for this. If you add tomatoes or lemon at the beginning of the cooking process, it can make it difficult for the beans to become soft, which can eventually ruin the soup.
  5. Seasoning Magic Pack! The condiment pack included in Hurst 15 bean soup is like magic! Add a ton of delicious concentrated ham flavor. I highly recommend using it, but if you decide not to, don’t throw it away, be sure to set it aside for later use.
  6. Use more or less liquid: the recipe as written produces a thick and filling soup. If you want a more soupy soup, you can add an additional 1-2 cups of liquid to the recipe.
  7. Let it cook even more: this soup will need to be cooked a minimum of 5 hours, or maybe a little longer so that the beans are soft and delicious. However, you can cook many more hours for convenience. This will continue to develop the taste of the soup, making it even tastier! I think this is especially useful if I need to put the soup in the cooking pot before work, or even cook it overnight!

Recipe shortcuts

This soup requires many hours to cook in a slow cooker, but there are a few tricks you can use when you’re short on time!

  • Cooking overnight – If you need the dish ready to take with your first thing in the morning, consider starting the soup the night before and letting it cook while you sleep. The house will smell amazing when you wake up and the soup is almost ready to use!
  • Cook in advance: this soup can be prepared in advance and stored for up to 4-5 days in the refrigerator. Reheat as needed.
  • Prepare like a frozen meal

This meal can be prepared as a frozen meal. For best flavor, cook within 6 months of freezing.

  1. Combine broth/water, onions, garlic and meat or hambone and place it in a freezer bag or freezer-friendly container

  5. Once you’re ready to cook, add the contents of the bag along with the beans to the slow cooker. You can add frozen or thawed. If you add frozen, it could take an additional 60-90 minutes to cook.

If you have leftovers after making 15 bean soup, then it’s your lucky day! They store and reheat well, and can start another delicious dish.

To store leftovers, separate them into meal-sized portions and then place them in an airtight container and store:
