a boneless pork shoulder or pork butt, also called a Boston cigarette butt. These cuts of pork have a lot of marbled fat for flavor, and they melt tender after pressure cooking.

You can also use a pork loin to make shredded pork. I have tried this recipe with both pork shoulder and pork tenderloin. My family enjoyed the shredded pork made with both cuts of meat. The delicious shredded pork begins with the best shredded pork massage

. I use a variation of my favorite pork recipe. It’s a combination of spices, seasonings, and brown sugar, all of which you probably have in your kitchen.

Cut the pork into four pieces and trim any excess fat. Rub the spice rub on all sides of the pork pieces. At this point, you can continue with the recipe and cook your pork, or you can wrap the meat tightly and refrigerate it for up to a day. The massage will act as a marinade and flavor the pork while you rest.

Now it’s time to add another layer of flavor! Using the stir-fry feature of your Instant Pot, brown the pork pieces everywhere. Before adding the pork to the pot, pour some olive oil and wait for the pot to heat up so you get a good sear. You may need to brown pork in batches if it doesn’t fit all at the bottom of the pot at once. Remove the golden pork to a clean plate.

pork sauce

You can mix the shredded pork sauce directly into the instant pot. First, pour about half a cup of chicken broth into the pot and use a spatula to scrape the golden pieces from the bottom of the pot. This step is important to prevent the pieces from burning at the bottom of the pot.

Then add the rest of the broth and a little barbecue sauce, apple cider vinegar and brown sugar or honey. You can use store-bought BBQ sauce or my homemade BBQ sauce. Stir well and then nest the pork in the sauce.

Cook pork under pressure for 60 minutes under high pressure. If you are using pork loin, cook it for 45 minutes under high pressure. When the cooking time is over, let the instant pot sit for 15 minutes to naturally release most of the pressure. A natural release makes the meat more tender, and pork will continue to cook during this time.

After 15 minutes, carefully turn the steam valve so that it vents and allows the rest of the steam and pressure to escape. Carefully open the lid of your Instant Pot and crush the pork. If desired, you can thicken the sauce with a suspension of cornstarch. See the complete recipe with ingredients and instructions on the recipe card at the end of this post.
