This slow cooking chicken and chorizo is absolutely loaded with flavor! It is a rich, hearty and delicious meal that is perfect for an uncomplicated dinner.

best thing about a slow cooker recipe is the fact that you can turn it on and leave it to work its magic. However, if I leave something to cook for up to 8 hours, it’s best to be very tasty when it comes out the other end. That’s something I was aware of when I worked on this recipe.
One of the first things you can do to add extra flavor to this dish is to fry the chicken before placing it in the slow cooker. By doing this, you build a nice golden crust in the chicken where the meat caramelizes in the hot pan. This is an added flavor that you simply won’t get by placing the raw chicken directly into the slow cooker. Same with onions and peppers, fry them over high heat to char them slightly, just to add a mild smoky flavor.
Need to cook chicken before putting it in a slow cooker?
Short answer – no. There’s little difference in texture between frying and not frying, but there’s a difference in taste, so it’s definitely something I recommend doing if you have time. If you are throwing the chicken directly into the slow cooker, I recommend trimming the fat beforehand, as you will not have the opportunity to leave it in the pan.
The best cut of chicken to use?
Chicken thighs work best, as they tend to be tastier than breast. You can use boneless or bone, but in both cases you will want to remove the skin.
Process the shots: strongly season the thighs and add them to the pan over high heat with oil (photo 1), turn when golden brown, and then place it in the slow cooker (photo 2), add the peppers and onion to the pan (photo 3), add the garlic, and then place it in the slow cooker (photo 4).

onions and peppers is the only pre-cooking you’ll ever have to do, it’s easy to navigate from here on out, promise 🤣
Once you enter all the ingredients, you want to add chicken broth and Chopped tomatoes: both will help create the sauce. At first it may seem like there isn’t enough liquid, but as the stew cooks, squeeze all the moisture out of the vegetables that help create the sauce.
How long do I need to cook slowly?
I have tried this recipe on both low and high settings and the difference is negligible. I find that the best results come when cooking over high heat for 4 hours or low for 7-8 hours.
Can you overcook in a slow cooker?
You can, so I don’t recommend going too far above those times (more wiggle room at low settings, going more than an hour or so won’t hurt). You’ll notice that the top of the stew starts to dry out and the edges of the sauce start to burn if you cook slowly for too long.

Serving chicken and chorizo
When it comes to serving this dish, I usually serve individual portions with buttered bread , but it is abundant enough to serve alone. If you want to increase the food further, you can serve it with rice or mash. If you want to add a little “something,” then shredded feta cheese and finely chopped fresh parsley go great on top.
