My favorite sausage chili recipe. A hearty but rich slow cooker chili recipe that is perfect for game day or a cold night.

Salchicha Chili

Growing up with a pot of chili was a staple in my mother’s kitchen during the winter. I have continued that tradition in my own home. The chili recipe has evolved over the years and this slow cooker sausage is not just a simple recipe, but the depth of flavor will leave you wanting seconds.

Now traditionally chili is made with ground beef. I like to use a soft (or hot) Italian sausage. I first tried this at a local restaurant. The spices in the ground sausage added additional flavors to the chili. I also noticed that when buying the Italian sausage it was significantly cheaper than ground beef. That’s why my favorite chili now is the sausage chili, it’s tasty and affordable.

Why make chili in a slow cooker?

When cooking chili you should cook it low and slow. Not only will this help you develop a depth of flavor, but it will also keep you thick instead of a traditional liquid soup.

The good thing about the mechanical cooking pot is that you can set it and forget it for a few hours. I made this pot during a snowstorm. When I arrived from the snow, I had the best comfort bowl waiting for me.

This is the newest version of the slow cooker I have. I love that it has a timer and travel clips for when I take it to a meal. It even has a meat thermometer.

  • Italian ground Soft sausage
  • Onion
  • Pepper Crushed tomatoes
  • Tomato sauce

  • Tomato paste
  • Chipotle beans Peppers in Adobo Chili sauce
  • Cumin

How to make

is really easy to make, you will need to brown the meat on the stove and then cook it in the slow cooker


Start by heating oil in a skillet over medium-high heat. Cook and stir the Italian sausage, onion and pepper. Break the sausage with a wooden spoon. Cook until sausage is golden brown and crumbly for about 10 minutes.

Combine all ingredients in the slow cooker and stir. Cook over high heat for 4 hours or low for 6-8 hours. Top with cheese, sour cream, avocado or serve with tortilla chips.

Can you freeze

Yes, you can freeze the chili. Store it in an airtight container and freeze it. It will last 4 to 6 months in the freezer. I like to freeze them in single-serving containers like this.
