Foodi, but can also be made using the slow cooker. For the slow cook version, follow my slow cook meat stew recipe.

I

did this using my Ninja Foodi, but I’ve also done it on other multicookers, including the Instant Pot and Pressure King Pro.

Use the cheapest, fattier cuts of meat for pressure cooking. If you buy them at the grocery store, they will usually be diced and labeled “stewed steak” or “stewed beef.” If you buy from a butcher, just ask them for the best meat for a casserole or stew.

Use

a selection of casserole vegetables such as carrots, potatoes, celery, leeks, etc. If you want to include vegetables like broccoli that don’t require much cooking time, leave them out of the pressure cooking stage, they can be added at the end.

Broth

I use between 800ml to 1L meat broth made with 2 cubes of meat broth (or pots).

To spice up meat stew, I like to include bay leaves, Worcestershire sauce, garlic, onion, dried mixed herbs, tomato puree, as well as a little salt and pepper

Change the Ninja Foodi from sautéing/sealing to the pressure cooker and put it on high pressure for 30 minutes. Since there is so much in the pot, it will take around 15 minutes to reach the pressure, so remember to keep this in mind in your cooking time.

Ninja Foodi setting to seal before pressure cooking

At the end of cooking time, let the Ninja Foodi release naturally for at least 10 minutes. This will produce the best texture for the meat, it is also a safer method when there is a lot of hot liquid inside a pressure cooker.

After 10 minutes you can perform a quick release.

Remove the lid and turn on the stir-fry function. If the liquid is too thin, you can thicken it now by adding a few granules of sauce or using some cornmeal. The liquid will also shrink and thicken as you let it simmer with the sauté function activated.
