These easy-to-make unbaked apple pie bites are the perfect dessert to serve this fall!
Happy Saturday! I hope everyone’s weekend got off to a good start. I’ve had a crazy week, but fun. I started my week with a trip to Cleveland for an event hosted by the American Dairy Association Mideast. It was my first time in Cleveland, actually my first time in Ohio. Not only was the event wonderful, but I was also able to meet other great bloggers in person! I’ll share more about my dairy adventures in another post.
Today’s recipe is a fun, easy to make, super cute dessert made especially for my blogger friend Meg at With Salt and Wit. Meg is pregnant with her first baby due next month and a group of bloggers and I have gathered to give her a baby shower “All Things Fall”!
My contribution to Meg and her little son is these bites of unbaked apple pie. I know for a fact that, like me, Meg loves mini desserts. I mean seriously, what don’t you like about a little candy you can put in your mouth? Don’t cut it into pieces, you don’t have to share it, just open your mouth and enjoy that delicious bite!
Since this is a fall-themed baby shower, I had to do something with apples. Apple desserts are probably my favorite thing to eat in the fall, maybe even a little more than pumpkin ones. I wanted to make something that didn’t require turning on the oven and having to bake, so an apple pie filling on the stove was the way to go. This apple pie filling is like what you’d find in a traditional apple pie, so you won’t miss out on any of those beloved flavors.
Instead of using a cake crust that I would need to bake, I put the apple filling in mini filo cups. I love how crunchy and flaky the filo cups are and are just the right size for a mini dessert. Once the cups are full, top it off with some whipped cream, because who doesn’t love some whipped cream on top of their cake!
No Bake Apple Pie Bites are great because the filling can be made ahead of time and refrigerated until you’re ready to use. Simply reheat it on the stove or microwave just before you’re ready to serve them. The bites taste very slightly hot or even at room temperature. These mini treats only take a few minutes to assemble and are the perfect dessert for your next fall baby shower, party, or brunch!
