born and raised in arizona, we are used to very hot summers. but even though we’ve gotten used to them, we still like to have lots of great desserts to help us survive!
one of our favorites is the cookie and cream ice cream cake.
oreo ice cream cake is delicious and so easy to make. if you have tried our cake land and you love oreos then i think you will love this one too.
this cake can be changed with your favorite ice cream flavors. I think we’ll try mint chocolate chip next time, or maybe the bluebell two-step cookie, which is half cookies and cream and half chocolate chip cookie dough – my favorite!

how to make ice cream cake
many people hesitate to make ice cream cakes because it seems difficult, but it is actually very simple! it takes time since you have to freeze it after adding each layer (a total of 5 hours of freezing time), but believe me, it’s worth it because you end up with these 5 delicious layers:
- oreo crust with butter
- oreo ice cream: you can change this to be any ice cream that tastes good with oreos
- chocolate fudge sauce
- whipped cream
- crushed oreo topping
- Summer Birthdays – Add sprinkles and candles for an ice cream birthday cake.
- Memorial Day and 4th of July parties: Use red, white, and blue sprinkles and candy.
- baby shower and bridal shower: decorate with icing flowers.
- regular ice will work for a short trip. avoid opening the cooler until you’re ready to take out the cake.
- Ice packs/blue ice last longer than regular ice and leave no water behind when melted. this is a good option for longer trips, or if your destination, such as a park, won’t have a freezer to store the cake in until lunchtime.
- dry ice is the third option. this will keep your cake frozen for quite some time. keep in mind that you will need more time to thaw the cake before serving or it will be too frozen/hard to cut.

Cookie Crust. Add crushed cookie crumbs to bowl, reserving about ½ cup for topping. add melted butter to crushed oreos, mix together, then press into bottom of greased 9×13 pan.

fudge sauce. take it out, drizzle chocolate sauce over the ice cream and freeze for another hour. make sure the sauce is cold because hot fudge sauce can cause the ice cream to melt.

once frozen, remove both rounds from pan and stack. you can add oreos and whipped cream to the bottom layer of ice cream, stack the second layer, and decorate the top.
