is really affordable, usually between $4-6 per pound and much cheaper than short ribs with bone if they run out. In those days of yesteryear, oxtail was one of the cheapest cuts of beef you could buy. It was in the same price category as soup bones. It is literally the fleshy, bony tail of a cow.
Using that fleshy, bony tail of a cow is an African-American culinary tradition that has been passed down from generation to generation in times when every part was used so that nothing could go to waste. Unfortunately, this also meant that it became more expensive over time as people began to recognize its value and quality, let’s face it: once something is considered “gourmet”, the price always increases.

Jamaicans know oxtail. They love our stewed oxtail, curry, browned and then simmered in a sauce of carrots, white beans, onions and Scottish peppers. Attribute it to supply chain problems, we use habanero instead of the elusive (in our area) Scotch pepper.

This recipe would not pair well with wine. Now, if it were a slow cooker dish from the French oxtail recipe, that might be different, as I’m sure they would use red wine. It just doesn’t work with the Jamaican flavors we were looking for. Knowing the French, they would also add bay leaves… But that could be a dish for another day.

Yes, I would simply use the slow cooker setting. However, I would avoid using my air fryer as this does not translate well into air fryer recipes.

The trick is a low temperature and slow cooking for best results. That helps the meat literally fall off the bone and you end up with a good oxtail sauce.
I truly believe that slow cooker oxtails are the way to go.
What do you use with Jamaican oxtail?
It really may be a one-pot meal, but if you’re inclined to add to the plate, or even want to stretch it a bit for a crowd? We suggest serving it with traditional favorites like fried plantains and yellow rice.
How is leftover oxtail stew stored?
If you have any leftover Jamaican oxtail stew, simply place it in an airtight container and then it can be stored in the fridge for up to four days. We do not recommend freezing this dish, as it will affect the taste and texture.
Reheat the Jamaican oxtail over low heat on the stove until warmed up.
Jamaican oxtail soup or stew recipe
While it’s so close to a traditional Jamaican dish, I’m not sure if you’d find it in a Jamaican restaurant. It would be very expensive.
What you need to make our Jamaican oxtail slow cooker recipe:

- white vinegar 1/4 cup
- brown sugar
- Worcestershire sauce
- 2 teaspoons garlic powder
- ground allspice
- teaspoon dried thyme 1
- can white beans, drained: butter beans, lima beans, or northern beans would work well. Just think about beans.
- 2 tablespoons vegetable oil
- large white onion
- 4 green onions
- tablespoon garlic
- 2 carrots
- habanero pepper, seeds out, chopped – any hot pepper would serve in a pinch.
- – honestly, you do NOT need any more cups of beef broth!
- ketchup or tomato paste
- cornstarch + 1 tablespoon
1 tablespoon soy sauce 1

Water Slow cooker instructions:
Rinse oxtails in vinegar and water, then dry them with paper towels.
In a shallow dish, combine brown sugar, soy sauce, Worcestershire sauce, garlic powder, allspice, and thyme to make your oxtail seasoning.
Roll the oxtails into the
mixture, cover all sides, and then place the oxtails at the base of your slow cooker.

Cover and simmer for 6-8 hours until oxtail meat falls off the bone.
Remove the oxtails from the pot and set aside
30 minutes before the cooking time ends, mix the cornstarch and water to form a suspension and stir in the pot along with the white beans. This will help thicken your broth.
Return the oxtails and cook for the last 30 minutes.
