is really affordable, usually between $4-6 per pound and much cheaper than short ribs with bone if they run out. In those days of yesteryear, oxtail was one of the cheapest cuts of beef you could buy. It was in the same price category as soup bones. It is literally the fleshy, bony tail of a cow.

Using that fleshy, bony tail of a cow is an African-American culinary tradition that has been passed down from generation to generation in times when every part was used so that nothing could go to waste. Unfortunately, this also meant that it became more expensive over time as people began to recognize its value and quality, let’s face it: once something is considered “gourmet”, the price always increases.

This recipe would not pair well with wine. Now, if it were a slow cooker dish from the French oxtail recipe, that might be different, as I’m sure they would use red wine. It just doesn’t work with the Jamaican flavors we were looking for. Knowing the French, they would also add bay leaves… But that could be a dish for another day.

  • brown sugar
  • 1 tablespoon soy sauce 1

  • can white beans, drained: butter beans, lima beans, or northern beans would work well. Just think about beans.
  • 2 tablespoons vegetable oil

  • large white onion

  • 2 carrots

  • habanero pepper, seeds out, chopped – any hot pepper would serve in a pinch.
