In theory, red wine sauce is optional, but you really don’t want those delicious drops of pan to go to waste. In addition, it is a wonderful sauce in the round roast of meat, vegetables and leftovers.

When it comes to lean, inexpensive, easy-to-cook cuts of beef, it’s hard to beat the bottom round roast. It is a good value because it comes from the rump and hind legs, which are more muscular. The lower fat content makes it less tender, so it’s not ideal for steaks, but it’s perfect for slow cooking.

My local butcher calls it bottom round roast, but you might see this cut labeled Outdoor Round Roast, Bottom Round Oven Roast, Bottom Round Pot Roast, Bottom Round Rump Roast, or Just Round Meat Roast. Just make sure it’s a lower round, not a top round, at the best price. Top Round is tender enough to use for steaks, and tends to come with a higher price.

you’re looking for a protein-rich source, then it’s hard to beat the bottom round. A trimmed 3-ounce serving has 24 grams of protein, but only 4 to 5 grams of fat. It is also a good friendly source for allergies of heme, niacin, vitamin B6, vitamin B12, zinc and selenium.

Extra virgin olive oil has a smoke point that’s just below 375°F, so it’s on the high end of this recipe. In a pinch, you can substitute your favorite cooking oil of medium or high temperature.



I keep the gluten-free and corn-free sauce with arrowroot starch, but it can be more expensive than other starches. If you agree with corn, you can substitute corn starch for corn. Choose an organic or non-GMO brand if possible.

I use Pacific Foods brand organic meat broth, which is gluten-free and has a pleasant full-bodied taste. If you choose to use an unsalted bone broth or broth, you may need to season the sauce to taste with a little sea salt.
