Butter Instant Pot garlic short ribs are flavored with a simple combination of butter, garlic and fresh thyme. Now you can enjoy incredibly tender and succulent short ribs in a fraction of the time.

usually made braised ribs with red wine, but after a life-changing experience (too far?) with Garlic Butter Chicken, the next time I planned to make short ribs, I decided to try using garlic and butter with beef bone broth for flavor.

However, it makes a lot of sense. The steak topped with butter composed of garlic herbs is very tasty.

I also wanted to make short ribs in the Instant Pot, as the traditional method of cooking them slowly in the oven takes hours. These short ribs are perfectly tender and tasty.

This recipe makes it very easy to make short juicy ribs. It is also much faster when using an instant cooker or pressure cooker.

How to Make

1.5 pounds

  • of boneless short ribs :Cut. You can also use 2-3 pounds of short ribs with bone, if you prefer. The only change will be a slight increase in cooking time.
  • 2.5 cups of meat broth: more or less. You need enough stock to cover the short ribs.
  • 2 tablespoons unsalted butter
  • 4 garlic cloves
  • : fresh is better. 1 tablespoon

  • thyme: fresh is best, but you can use 1/2 tablespoon of dry instead, if necessary.


Trim any excess fat from the short ribs and dry it with a paper towel. Season with salt and pepper. Reserve.

Chop the garlic and remove the thyme leaves.

Turn on your Instant Pot to sauté. Once the screen says “HOT”, add the butter and let it melt.

Next, add the short ribs and seal on all sides until golden brown. This will take about 3-4 minutes per side.

to the instant pot. Cook for a minute, then add a splash of bone broth to deglaze the bottom of the pot, using a wooden or silicone spoon to scrape off any pieces from the bottom.

Disable the stir-fry function and add the ribs back to the pot. Pour the bone broth until the ribs are covered. You may need more or less than the prescription requires depending on the size of your short ribs and the Instant Pot you are using.

Place the lid on the instant pot and make sure the valve is in the sealing position. Put to cook under pressure over high heat for 35 minutes, followed by a natural release of 15 minutes.

After the natural release time is over, carefully turn the valve to ventilate, and then open the pot.

Optional: You can turn on your Instant Pot in the soup function and bring the leftover liquid to a boil to halve. This can take up to 30 minutes. The broth is likely salty, so a small amount goes a long way toward adding even more flavor to your short ribs.
