Cream Cheese Chicken Chili
OK, this seriously has to be one of the tastiest chili recipes I’ve ever tried. Everyone is going to love this recipe! I promise.
The flavors of chili combine perfectly with the ranchero seasoning. Then it is made so creamy by adding cream cheese. It’s something you’d never imagine when you think of a traditional chili, but it’s exactly what you’re going to crave from now on after trying it.
As soon as I first tried it, I started planning when I could do it again. It’s really that good. I’ve already done it so many times, and everyone has given it 5-star reviews.
I originally planned to cover it with some grated cheese, but after pouring some in a bowl and eating something, the idea of cheese went out the window, it was already perfect without it! It’s a filling, delicious, and healthy meal that will always be in our meal rotation during the colder months.

What is the difference between
white chili and regular chili?
It’s called white chili because the base flavors are all white or pale, compared to the dark, red ingredients in a traditional chili recipe. Regular chili uses a tomato base with ground beef and red beans. The white chili is made with chicken, chicken broth, a creamy element (like cream cheese) and is flavored with green chilies.
This recipe is a kind of marriage between the two, because it combines chicken and chicken broth, with RO-TEL and black beans.
Ingredients
For this recipe you will need chicken breasts, canned pinto beans, forbidden black beans, RO-TEL (or some other combination of diced tomatoes and green chiles), canned corn, onion, chicken broth, cream cheese and fresh cilantro

If you want something closer to a true white chili, you can substitute pinto and black beans with excellent northern beans or cannellini beans.
How to Make Creamy White Chicken Chili
Start by sprinkling the inside of the slow cooker with cooking oil, then place the butterfly chicken breasts on it. Top with drained and rinsed canned beans, corn, onion and RO-TEL.

Should chili be thick or broth?
Chili should be significantly more filling than other soups, and should not have a soup texture. This white chicken chili is not as thick as a real chili, like this Chili Con Carne, but it is thicker than most soups.
How does white chicken chili thicken?
The easiest way to thicken any type of soup, stew or chili is to mix some cornstarch with some cold water and then add that mixture to the pot. Bring to a boil for a few minutes to activate the thickening properties of cornstarch, and enjoy your thickest soup!

Can you freeze
white chicken chili?
Unfortunately, this soup will not freeze well. Cream cheese doesn’t have the best texture when thawed, and since it’s a main ingredient in this dish, I wouldn’t recommend freezing it.
Try serving
this with a side of cornbread or some crushed tortilla chips on top. It is also delicious served with a slice of lime and topped with shredded cheddar cheese or pepper jack cheese.
