You’ve been on for some time, you’ll know we’re big fans of Mexican cuisine. When Cafe Rio first opened in 1997 in St. George, Utah, we were some of the first customers and quickly became their biggest fans. They now have locations throughout the western United States and Maryland, but in the past, when we lived in California, Nevada and Washington, there was no Rio Café nearby. Because of this, many of our first imitation recipes were from Cafe Rio trying to achieve “Fresh Mex” flavors at home. We have had some success, if we say it ourselves. What about Cafe Rio Dressing?
Most people say their favorite menu item at Cafe Rio is sweet pork, but I say without a MOMENT of hesitation that mine is the creamy dressing at Tomatillo Ranch! It’s spicy and spicy and SO GOOD. What I like the most is that it’s so versatile! It can be much more than just a salad dressing. I got it serious about everything: our Cafe Rio Burrito and Cafe Rio Salad for sure, plus quesadillas, tacos, nachos, sandwiches, I even dip vegetables in it! I can’t keep it in the fridge for more than a few days before the bottle is licked clean!

Getting The Right Consistency
We’ve had some feedback that the dressing is too liquid. This is easy to prevent. Remember, it’s much easier to dilute a dressing than to try to thicken it later without spoiling the flavors. Follow these tips for a perfect bandage thickness every time.
- If you’re picky about consistency, add whey little by little while mixing until you get the right consistency
- Use real whey, not a substitute. If you don’t have whey and need to substitute milk with lemon or vinegar, start with just 1/2 cup of the substitute in the blender and then add a little at a time until your preferred consistency is reached.
- Limes can vary in size and juiciness. Usually, one lime in juice will produce 2 tablespoons. Start with 1 teaspoon in the blender. After mixing, continue adding 1 teaspoon at a time until the consistency is right for you.

Recipe Tips
- Use Best Foods / Hellmann’s Mayonnaise. It has the best taste and consistency.
- If you want a lighter version of this recipe, you can always use Greek yogurt instead of mayonnaise. Keep in mind that the consistency and taste won’t be exactly the same, but it will still taste delicious.
- Store leftovers in an airtight container in the refrigerator for up to 5 days. Stir well before serving.
- This recipe does NOT freeze well. Freezing will cause the dressing to separate and ruin the creamy consistency.
